Spiedie Sauce

MARINADE

Mix together in a large non-metallic bowl:

8        -        bay leaves (crumbled up)

4        -        teaspoon     oregano

8        -        small           cloves of garlic, minced

-        1/2     cup             lemon juice

-        1/2     cup             olive oil

-        3/4     cup             vinegar

1        -        teaspoon     pepper (fresh crushed is better)

3        -        teaspoons   salt

-        -        -                  chicken and veggies

 

  1. Mix all ingredients together in a non-metallic dish.
  2. Add meat, cover, and marinate in the refrigerator for at least 24 hours, stirring occasionally.
  3. Add cut up veggies of choice to marinate for 6-8 hours.(Peppers, onions tomatoes)
  4. Skewer as a shish-ka-bob and grill ‘til done.  Any meat will do.  Chicken and pork tend to taste the best.

 

Background:       This is a traditional recipe from Jenny’s summer experiences.  I discovered it in Florida with a colleague and that’s all we ate for several days.  YUM!

Time:             10-12 Minutes
Yield:             Based on the chicken and veggies used.
